The Imperia, together with the Marcato are the home pasta maker machines that dominate the market in Italy since 1932.
In the fifties this was a common wedding gift and on Sundays there was the tradition to make fettuccini for the whole family.
- First thing you have to fix the machine to the table by using the clamp B.
- Unscrew completely the stem D. Insert the upper part of the clamp in the hole C. Rotate the screw D to fix the clamp.
- Insert the handle M in the hole N.
- The knob I can be rotated by keeping the lever H pressed.
- The rotation allows to change the opening between the two rollers.
- Start with the rollers fully open.
- To cut the fettuccini the handle must be moved to one of the holes O according to the width desired.
You have to start to roll the dought starting with the roller at the maximum opening that is 2,2 mm. Roll two times and then reduce the opening by one step. Repeat up to achieve de desired thickness.
Remember than when you will boil the fettuccini their thickness will double. The best setting is one stop before the last. If you have to make ravioli roll up to the last stop because the ravioli are made by coupling two layers with the desired filling in between.
